Grilled Lemon-Garlic Zucchini

Marinated in lemon, garlic, and parsley before grilling, this zucchini dish pairs nicely with any barbecued meat as is or can be chilled and tossed for a refreshing summer salad.


  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons chopped flat-leaf parsley
  • .5 teaspoon fresh lemon juice
  • .25 teaspoon sea salt
  • Dash garlic salt
  • Dash freshly ground black pepper
  • 1 pound zucchini, edges trimmed and thinly sliced


  1. Place all ingredients, except zucchini, in a small bowl and whisk to combine.
  2. Place zucchini in a shallow dish, pour the marinade over, and let sit for 15 minutes.
  3. Meanwhile, preheat a grill to medium heat.
  4. Grill the zucchini for 3 minutes on each side, until tender and bright green.
