This chicken melts in your mouth and smells incredible when you walk in the house after a long day at work or running kids to and from activities. Serve in butter lettuce cups with all of your favorite taco fixings.
1 pound boneless chicken thighs, trimmed of fat
1 pound boneless chicken breast
3 cups diced tomatoes in juices, from a jar or fresh
1 small yellow onion, diced
4 cloves garlic, minced
2 Serrano chilies, seeded and chopped
2 tablespoons chopped cilantro
1 tablespoon cumin
1 tablespoon chili powder
2.5 teaspoons coriander
2 teaspoons sea salt
.5 teaspoon cayenne pepper
.5 teaspoon black pepper
Place all the ingredients in a slow cooker and cook on low for 5 hours.
Remove the chicken, shred with two forks, then return to sauce for an additional hour.
